What is the Dryer?
The dryer represents a decisive stage in the pasta production process, as its purpose is to reduce the internal moisture content down to the optimal levels for preservation and commercial stability. Pastamaster technology allows the process to be carried out at both high and low temperatures, operating through continuous and automatic monitoring of the environmental parameters inside the chamber.
Extremely precise thermal management is essential to avoid structural stress on the product: an incorrect drying curve could in fact cause internal tension and surface micro-fractures.
